This salad keeps well in the fridge and is great as leftovers. Make an extra big batch to enjoy all week! While it’s true this recipe has a lot of steps, it’s actually quite simple to make. The extra work of preparing each part of this salad pays off in it’s amazing nutrient density. This salad is the ultimate comfort food, it’s filling and satisfying, and even my skeptical children think it’s fun to eat because it’s so colorful.
