Healing Chicken Noodle Soup [By Jen]

I wanted to share a recipe for my Healing Chicken Noodle Soup in case you’re battling sickness or just need a little comfort for the January Blues. I’m including instructions for how to make Chicken Bone Broth as well, because it’s essential to making the soup as nourishing and immunity boosting as possible. Below you’ll also find some additional notes and modifications to the recipes, enjoy!

Cooked, Shredded Chicken
Take all the chicken you’ve pulled off the bones and place in your stand mixer
Beat with the paddle attachment on low speed until the meat is shredded
Place meat in the refrigerator or use promptly for soup, tacos, whatever!


Modified Recipe With Chicken Carcass Only

To make this recipe starting with the chicken carcass only (let’s say you roasted the chicken and don’t want to waste the bones!) follow these modified instructions:Place chicken carcass/bones into the stockpot with vegetables
Add Raw ACV
Cover with water
Bring water to rapid simmer (just before boiling)
Place Stockpot in the oven at 150 degrees for 24 hours
Remove pot from oven and use ladle, canning funnel, and strainer to pour into ½ gallon mason jars
Allow to cool slightly before putting lids and on putting in the fridge
Transfer to a freezer safe container (½ gallon mason jars do NOT freeze well!) and freeze, or place in the fridge in the mason jars for up to two weeks
